Make your own bread with all vegan ingredients and natural flavor, including whole-wheat flour, rye flour, sunflower seeds and flax seeds. It is the perfect choice for a filling breakfast or lunch.
Measure up the water and oat milk in the same measure cup. Make sure this mixture is room temperature - so if the milk is cold you may have to use some luke warm water.If you don`t have oat milk, you can also use other vegan options as substitutes, such as almond milk or soy milk, but I find it tastes best with oat milk.
Add the mixture of water and oat milk to the baking bowl with the fresh yeast and mix with a wooden spoon until the yeast has dissolved.
Add all the dry ingredients (except the all-purpose flour ment for the kneading process) and mix well.
Place the dough in a warm place to rise. I add luke warrm/warm water to my sink and place the bowl in the water (if you do this, make sure it does not run over the edges of the bowl and onto your dough). Cover with a kitchen towel and let the dough rise for 30-40 minutes until it has doubled in size.
While the dough is rising, take two bread forms and smear these with vegan butter. If you don`t have vegan butter you can use olive oil instead.
Measure up 250 g of all-purpose flour and spread about half of it out on your working surface. Take the dough out of the bowl with a spatula, onto the floured baking surface, and knead for 10 minutes, adding in the rest of the flour as it feels sticky. Once all the flour has been added and you are well into kneading the dough will no longer stick to your hands or the working surface.The dough is quite heavy so unless you have an appropriate and strong bread machine I recommend that you knead by hand.
Divide the dough into two equal pieces and shape your loaves. Place the pieces of dough into the bread forms.
Once more, add luke warm/warm water to your sink and place the bread forms in the water (again, make sure that the water does not run over the edges of the bread forms). Cover with a kitchen towel and let the loaves rise for 25-30 minutes until they rise a little beyond the top of the forms.
While the loaves are rising, preheat your oven to 200 degrees Celcius (392 degrees Fahrenheit).
When the loaves are done rising, lightly drizzle some all-purpose flour over your loaves, and use a razor blade or a sharp knife to score your bread (see the video).
Bake in the middle of the oven at 200 degrees Celcius (392 degrees Fahrenheit) for 50 minutes.
Take the loaves out of the oven, carefully take them out of the forms and place on a wire rack to cool.
