Easy Vegan Bread with Sunflower- and Flax Seeds
Make your own bread with all vegan ingredients and natural flavor. This recipe has whole-wheat flour, rye flour, sunflower seeds and flax seeds. It is the perfect choice for a filling breakfast or lunch.
The homemade vegan bread recipe is made with fresh yeast so it does need time to rise, but it really is not a lot of work. All that you need are some basic ingredients and a little bit of time. The recipe gives you two loaves of bread. So you also have some to put in the freezer so you don`t have to bake too often.

The easiest and most convenient choice may be to buy one of the vegan brands from the bread aisle at your local grocery store. But as you may know by now I am a big fan of homemade food, and bread is no exception. Homemade is most often healthier as there are no artificial ingredients and as you have full control over what goes into your food.
This Bread Recipe has a lot of History
This bread recipe has a lot of history… going back to the 1950s when my grandmother and grandfather used to spend their summers in the Norwegian countryside (in Telemark). My grandmother bought a bread at a local bakery and found it so tasty that she tried to mimic the recipe as best she could. And her end result… a most delicious bread recipe. She has baked three loaves almost weekly ever since. You could probably fill an entire house with all the loaves she has baken over the years. She gives many of them away to family so that they always have something homebaked to enjoy. We call her Moa (nickname for Oma which means grandmother in German) and so this bread has always been known in our family as “Moa-bread”.
I got her recipe and turned the bread vegan so that I can also bake this at home, for myself and family. As it is made with simple ingredients and we have good vegan substitutes this was not a big challenge. And it did not compromise the taste at all.
I simply love cheating a bit, cutting into a warm loaf of bread before it has cooled down completely. Enjoying a warm wide slice with peanut butter or vegan butter and a drizzle of salt. YUM!

Easy Bread with Sunflower- and Flax Seeds
Ingredients
- 50 g fresh yeast
- 600 ml water
- 150 ml oat milk
- 600 g all-purpose flour
- 200 g whole wheat flour
- 100 g rye flour
- 100 g sunflower seeds
- 50 g flax seeds
- 15 g salt
- 2 tbs vegan butter
- 200 g all-purpose flour for kneading
Instructions
- Add the fresh yeast to a large baking bowl.
- Measure up the water and oat milk in the same measure cup. Make sure this mixture is room temperature - so if the milk is cold you may have to use some luke warm water.If you don`t have oat milk, you can also use other vegan options as substitutes, such as almond milk or soy milk, but I find it tastes best with oat milk.
- Add the mixture of water and oat milk to the baking bowl with the fresh yeast and mix with a wooden spoon until the yeast has dissolved.
- Add all the dry ingredients (except the all-purpose flour ment for the kneading process) and mix well.
- Place the dough in a warm place to rise. I add luke warrm/warm water to my sink and place the bowl in the water (if you do this, make sure it does not run over the edges of the bowl and onto your dough). Cover with a kitchen towel and let the dough rise for 30-40 minutes until it has doubled in size.
- While the dough is rising, take two bread forms and smear these with vegan butter. If you don`t have vegan butter you can use olive oil instead.
- Measure up 250 g of all-purpose flour and spread about half of it out on your working surface. Take the dough out of the bowl with a spatula, onto the floured baking surface, and knead for 10 minutes, adding in the rest of the flour as it feels sticky. Once all the flour has been added and you are well into kneading the dough will no longer stick to your hands or the working surface.The dough is quite heavy so unless you have an appropriate and strong bread machine I recommend that you knead by hand.
- Divide the dough into two equal pieces and shape your loaves. Place the pieces of dough into the bread forms.
- Once more, add luke warm/warm water to your sink and place the bread forms in the water (again, make sure that the water does not run over the edges of the bread forms). Cover with a kitchen towel and let the loaves rise for 25-30 minutes until they rise a little beyond the top of the forms.
- While the loaves are rising, preheat your oven to 200 degrees Celcius (392 degrees Fahrenheit).
- When the loaves are done rising, lightly drizzle some all-purpose flour over your loaves, and use a razor blade or a sharp knife to score your bread (see the video).
- Bake in the middle of the oven at 200 degrees Celcius (392 degrees Fahrenheit) for 50 minutes.
- Take the loaves out of the oven, carefully take them out of the forms and place on a wire rack to cool.
